What we did
We were appointed by JLL and Gindi Capital to review their proposals for a brand new retail destination, set in the heart of Las Vegas on The Strip. As part of our work, we spent time within Las Vegas to understand the complexity of the existing foodservice market – who was where, what were the types of foodservice and what was missing from the market.
Furthermore, we developed a demand model for the asset based on the information we gathered during our research, the existing proposals for the site and the overall vision for the scheme. Our work also included a review of the proposed plans, creating sustainable commercial projections and presenting our foodservice strategy for the future.
Results
Based on our research and the spaces available, we came to the conclusion that the Client should focus their F&B towards the Fast Casual/All Day Dining/Casual Dining and Social Drinking markets, to capture the right type of footfall across different day periods.
We worked closely with the Architect team, to create spaces that are attractive to both consumers and tenants, and we are still working with the team to find global operators who are interested in taking a Las Vegas flagship unit.
